Just in time for 4th of July celebrations, this refreshing and colorful watermelon salad will most definitely be a crowd pleaser this summer! It features fresh basil and mint, the best summer fruit, crunchy veggies, crumbled feta, and the citrusy tang of lime juice (and jalapeno if you dare 🙂
Watermelon Salad with Fresh Herbs and Feta
Ingredients
Dressing
- 1/2 Lime, juice and zest
- 3-4 tbsp Extra virgin olive oil
- 1/2 tsp Sea salt
Salad
- 3/4 cup Fresh basil, chopped
- 1/4 cup Fresh mint, chopped
- 1 mini Watermelon, cubed
- 3 Persian cucumbers, cut into half-moons
- 1/2 Medium red onion, sliced
- 1 cup Strawberries, sliced
- 3/4 cup Crumbled feta (or goat cheese)
- 1 tsp Jalapeño, finely chopped (optional)
Instructions

Whisk together the dressing ingredients in a large bowl.

In the same bowl, add the fresh herbs, jalapeño (if using), and mix well.

Add remaining ingredients and toss together.
This salad lasts fresh for about a day in the refrigerator. Be sure to store in an airtight container.
