Lentil Veggie Bowl

A protein packed, SIBO friendly veggie bowl that will leave you feeling full and satisfied.

Ingredients

  • 1/4 cup broccoli florets
  • 1/4 cup carrots chopped
  • 1/4 cup purple cabbage chopped
  • 1/4 cup lentils red, green or brown
  • 1/4 cup cooked quinoa or white rice if tolerated**
  • 1 tbso green onion tops only
  • 1 tbsp olive oil
  • sea salt & black pepper to taste

Instructions

  1. Prior to cooking, pour lentils into a bowl and cover with cold water allowing them to soak for two hours. Drain the beans and rinse. Cook lentils according to package instructions using fresh water.

  2. Preheat oven to 375 degrees.

  3. Add carrots and broccoli to a sheet pan. Drizzle with olive oil and sprinkle with sea salt and black pepper to taste. Cook in preheated oven for 20-25 minutes or until fork tender.

  4. Remove vegetables from oven and add to a bowl with cooked quinoa, cabbage, green onions and cooked lentils.

Recipe Notes

*This meal can be prepared ahead of time for the week’s lunches, however if you are sensitive to leftover vegetables, it is recommended to prepare this meal fresh.
