Gluten free, grain free, vegan- what’s not to LOVE!

Food sensitivities and allergies can make it challenging to enjoy the foods you used to love. These simple, delicious tortillas can replace flour, rice, corn, or other options (although they taste most like a flour tortilla). They are high fiber, low carb, and easily made right in your kitchen.

Almond flour, psyllium husk, and water – that’s it! Finely ground almond flour gives the best texture as do whole psyllium husks, not powder.

Three Ingredient Almond Flour Tortillas

Ingredients

  • 1 Cup Almond Flour
  • 2 1/2 Tbsp Whole Psyllium Husks
  • 1/2 Cup Water
  • 1/4 Tsp Fine sea salt (more or less to taste) Optional

Instructions

  1. Wisk the almond flour and psyllium husk together in a small mixing bowl. Option to add salt if you would like. Make sure any clumps are blended out.

  2. Add water and the mixture will quickly begin to thicken into a dough.

  3. Shape the dough into a smooth ball and divide into 5 equal pieces. Take each piece and shape into a ball. Place each ball between parchment paper sheets. Use a rolling pin to flatten out to about 6 inches.

  4. Heat a well-oiled cast iron skillet or nonstick pan lightly oiled to medium-high heat. Cook 1-2 minutes. They will likely bubble and puff in some places. Flip once slightly brown and finish cooking the other side. Transfer to cooling rack.
