Italian Herb Crusted Chicken

A SIBO-friendly and savory chicken recipe you'll want to eat over and over again!

Ingredients

  • 4 chicken thighs (can also use breasts)
  • 3 tbsp SIBO safe Italian seasoning
  • 1 tbsp olive oil or ghee
  • fresh lemon
  • sea salt and black pepper to taste

Instructions

  1. Pat chicken dry with a paper towel. Season one side with salt, pepper and Italian seasoning.

  2. Preheat large skillet (preferably cast iron) over medium heat. Add oil to pan. Once oil sizzles when splashed with a drop of water, it is hot enough to begin cooking.

  3. Place chicken in the skillet seasoned side down. Drizzle fresh squeezed lemon juice over the thighs to taste (about 1/2 tbsp). Allow to cook uncovered for 10 minutes. Reduce heat if chicken appears to be burning.

  4. Coat the other side of chicken with seasoning, flip and allow to cook for another 8-10 minutes.

  5. Let the chicken rest on a plate for 5 minutes before enjoying.

Recipe Notes

**You can make your own Italian seasoning to ensure it's SIBO friendly (without garlic and onion) by combining 2 tbsp of oregano, basil and parsley and one tbsp of sage and thyme. You can also purchase a SIBO-friendly option on amazon here.
