Italian Herb Crusted Chicken
A SIBO-friendly and savory chicken recipe you'll want to eat over and over again!
- 4 chicken thighs (can also use breasts)
- 3 tbsp SIBO safe Italian seasoning
- 1 tbsp olive oil or ghee
- fresh lemon
- sea salt and black pepper to taste
Pat chicken dry with a paper towel. Season one side with salt, pepper and Italian seasoning.
Preheat large skillet (preferably cast iron) over medium heat. Add oil to pan. Once oil sizzles when splashed with a drop of water, it is hot enough to begin cooking.
Place chicken in the skillet seasoned side down. Drizzle fresh squeezed lemon juice over the thighs to taste (about 1/2 tbsp). Allow to cook uncovered for 10 minutes. Reduce heat if chicken appears to be burning.
Coat the other side of chicken with seasoning, flip and allow to cook for another 8-10 minutes.
Let the chicken rest on a plate for 5 minutes before enjoying.
**You can make your own Italian seasoning to ensure it's SIBO friendly (without garlic and onion) by combining 2 tbsp of oregano, basil and parsley and one tbsp of sage and thyme. You can also purchase a SIBO-friendly option on amazon here.
