- 1 Avocado, sliced
- 2 Oranges and/or 1 grapefruit, peeled and segmented
- 1/2 bulb Fennel, thinly shaved
- 3-4 Radishes, thinly sliced
- 2 tbsp Pumpkin seeds
- 1 tbsp Pomegranate seeds Optional
- Fresh herbs (mint, parsley, or dill) Optional
Dressing
- 3 tbsp Extra virgin olive oil
- 2 tbsp Fresh lemon juice
- 1 tsp Dijon mustard
- 1 tsp Honey
- Pinch Sea salt
